Aubergine, cherry tomato and chicken goat cheese wrap
Ingredients for 4 wraps
- 4 wheat tortillas (here I took whole wheat)
- 1 fresh goat cheese
- about twenty cherry tomatoes (or oval)
- chicken cutlet
- a small eggplant
- Genoese pesto
- Olive oil and balsamic vinegar
- Salt
- Pepper

Steps
Cut the eggplant into cubes
Cut the chicken cutlet into cubes
Oil a pan with olive oil
Fry the eggplant and the chicken, salt and pepper to taste
Meanwhile spread the pesto on the wraps
Then goat cheese
Lay out some diced tomatoes
Once the eggplant/chicken mixture is golden brown, deglaze with balsamic vinegar
Spread the mixture while still hot on the wrap
Close the wrap and enjoy immediately
